Opazovan je bil řasovni potek Íarkosti prepeřenca s 6 % maǴřobe v odvisnosti od temperature (20ŚC in 60ŚC), vsebnosti antioksidanta (brez dodanega BHA-butilirani hidroksianizol, 0,02% dodanega BHA), ...embalaÍe (celofan in plastificirana alu-folija) ter duǴikove atmosfere pri pakiranju. V ustreznih řasovnih presledkih so bile izvajane senzoriřne analize in dolořena kislinska stopnja, peroksidno, anisidinsko in oksidacijsko Ǵtevilo. V řasu opazovanja nipriǴlo do intenzivnih hidrolitskih procesov. V prepeřencu, pakiranem v celofan, je bila neglede na dodatek BHA hitro zaznana Íarkost pri temperaturi 60ŚC, pa tudi pri temperaturi 20ŚC ob izpostavljanju dnevni svetlobi. BistvenoboljǴa obstojnost je bila ugotovljena pri prepeřencu, pakiranem v plastificirano alu-folijo, daleř najboljǴa pa pri prepeřencu, pakiranem v duǴikovi atmosferi.
