Inhibicija encimskega potemnenja svežih jabolčnih rezin : diplomska naloga = Browning inhibition of fresh apple slices : graduation thesis

Proučevali smo vpliv raztopin papaina (2%), natrijevega disulfita (0,3%) in saharoze (10%) ter medu (10%) na preprečevanje potemnenja olupljenih jabolčnih rezin. Jabolčne rezine smo pakirali v PA/PE ...vrečke v atmosferi zraka , ▫$N_2$▫ (99,99%), ▫$CO_2$▫ (99,99%) pri temperaturi 20°C in + 1°C. Stopnjo potemnenja smo ugotavljali z merjenjem barve (L, a, b sistem) in aktivnosti PFO. V tretiranih jabolčnih rezinah smo merili izločanje etilena, acetaldehida in etanola. Papain in kostanjev med preprečujeta potemnenje skoraj tako učinkovito kot natrijev disulfit. Aktivnost PFO je bila najnižja pri jabolčnih rezinah tretiranih z natrijevim disulfitom in papainom, najvišja pa pri rezinah tretiranih z medom in rezinah, ki niso bile tretirane. Izločanje etilena v jabolčnih rezinah se je povečevalo prvi dve uri po oluplenju, nato se je znižalo in ustalilo pri 2nl/gh. Vsebnost akumuliranega acetaldehida in etanola je bila najnižja pri rezinah hranjenih pri temperaturi + 1°C.
